Geboren 1977 in Tel Aviv. Amit Epstein studierte Theaterwissenschaften an der Thelma Yellin High School für Tanz, Theater und Performance und absolvierte anschließend einen Intensivkurs im Bereich Tanztheater an der SNDD in Amsterdam. Als Tänzer arbeitete er mit der Tanztheater Company Rina Sheinfeld in Tel Aviv. Anschließend studierte er Kunst an der Bezalel Academy of Art and Design in Jerusalem, wo er 2001 und 2002 mit dem »Bezalel Prize for Excellence« und dem »Meisler Prize« ausgezeichnet wurde. Im Anschluss besuchte er die Haute-Couture-Meisterklasse von Vivienne Westwood an der Universität der Künste in Berlin. Seit 2007 arbeitet Amit Epstein an verschiedenen Theatern als Kostümbildner, Dramaturg und Autor. Er hat an mehreren Tanz-, Oper- und Theaterproduktionen in Deutschland, der Schweiz, Österreich, Frankreich und Israel mitgewirkt, u.a. mit den Regisseuren Sebastian Nübling, Jan-Christoph Gockel und Yael Ronen. Bei der Kritikerumfrage von Theater heute 2010/2011 wurde er für sein Kostümbild für Reckless am Thalia Theater als bester Nachwuchskünstler genannt.
Am Schauspiel Hannover ist er in der Spielzeit 2021/22 verantwortlich für die Kostüme in Maries Bues Inszenierung Klimatrilogie von Thomas Köck.
