Pickering war von 1997 bis 2009 Ensemblemitglied am Badischen Staatstheater Karlsruhe, zuvor war er an der Oper Leipzig und den Städtischen Bühnen Bielefeld. Zu seinem Repertoire zählen u. a. Herodes in Salome, die Knusperhexe in Hänsel und Gretel, Don José in Carmen und Conte Almaviva in Le Nozze di Figaro. Darüber hinaus blieb er seiner australischen Heimat treu mit Festspielauftritten bei der Victoria State Opera, der Lyric Opera Queensland und der Opera Australia in Sydney und Melbourne. Auch nach seinem Ruhestand übernimmt Pickering nun gelegentlich Partien auf der Opernbühne.
